EASY Chicken Pesto Pasta + French Onion Pot Roast
You know how food bloggers tell unnecessary stories before given you the recipe? I REFUSE TO DO THAT!
Chicken Pesto Pasta
Serves 4, 20-30 minute cook, SUPER EASY
1lb ground chicken
1 pack of spaghetti
PESTO MIX
2 cups basil leaves
Half cup pistachios or pines nuts or macadamias or walnuts (I prefer pistachios)
2 or 3 garlic cloves
1/2 cup extra virgin olive oil
1/2 cup grated parmesan cheese
Salt and pepper
Add pesto mix to a blender or food processor and blend till smooth, about 1-2 mins.
Heat water for pasta in large pot, salt very well
Add pasta to boiling water. After about 5 mins scoop a CUP OF PASTA WATER (the water the pasta is cooking in - this is VITAL), hold on to the pasta water for later!
Heat olive oil in a pan, add chicken and cook.
Once pasta is al dente, add the cooked chicken and pesto and the pasta water and stir. The pasta water will help he sauce spread beautifully.
And serve, and top with more parmesan if you want, ya dirty dog x
French Onion Pot Roast
Serves 4, 30 mins of prep, cook time 3 hours.

2lbs chuck roast
2-3 onions, chopped (I refuse to chop onions, I use this thing: https://amzn.to/3AENMby)
1/2 stick butter
Half a head of garlic, chopped
1 tbsp flour
1/2 cup red wine
2 tbsp worstershire sauce
4 cups beef or chicken stock
2 bay leaves
French baguette (or any bread really)
Shredded cheese (I used cheddar)
Add olive oil to a dutch oven (or any large pot with a lid), and heat on high.
Add chuck roast to dutch oven and sear all sides till brown, about 5 mins. Season the meat as it sears with salt and pepper.
Remove meat from pot, set aside.
Reduce heat, add butter to pot, once melted, add chopped onions. Stir and cook till the onion becomes floppy and translucent. About 4-5 mins.
Add garlic and flour to onion, stir till flour has absorbed. Add wine, and worstershire, stir.
Add broth and bay leaves, and add the seared meat back to the pot. Bring it to the boil, reduce heat and cover.
Leave covered for 2.5-3 hours.
Your meat should now be tender af, remove it from liquid and dice it, then put it back into the liquid.
Cut bread slices into quarters, and place on top of your meat and onion stew. then add the shredded cheese, it should sit on top of the bread.
Turn on your oven broiler, and place the dutch oven, uncovered in the oven. This should take about 2-3 minutes, once the cheese is melted to perfection, remove the dutch oven.
Ready to serve and enjoy.
